Coconut Iced Coffee

Ingredients

  • 5 oz strongly brewed coffee
  • 1/3 cup coconut sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 2-3 tbsp coconut milk
  • coffee cubes
  • coconut whipped cream
  • 1 tbsp toasted coconut
  • 2 tbsp chocolate sauce

Instructions

  1. Rim a glass with chocolate sauce. Dip the rim of the glass into toasted coconut.

  2. Add syrup to the inside of the glass, and set the glass aside.

  3. Combine the coconut milk, vanilla extract, and coconut sweetened condensed milk together in a separate glass. Stir until thoroughly mixed.

  4. Add coffee cubes and coffee into this preparation. 

  5. Add the mix to the glass with chocolate syrup. Stir.

How to Make a Coconut Iced Coffee

Making an iced coconut coffee can take a while, but we’ll break down as many of the steps as we can so it won’t seem so overwhelming.

The name of the game here is fun. Tap into that culinary stream of consciousness and enjoy the process!

Ingredients

The Coffee Ice Cubes

  • Brewed coffee

Other item:

  • Ice cube tray

The Coconut Whipped Cream

  • 1 can coconut milk (full fat)
  • 1 tsp vanilla extract
  • 1 tbsp powdered sugar

Other items:

  • Bowl
  • Mixer

The Coconut Sweetened Condensed Milk

  • 1 can coconut milk (full fat)
  • ½ tsp vanilla extract
  • ½ cup sugar

Other items:

  • Saucepan
  • Mason jar with lid

Other items for the Coconut Iced Coffee:

  • Small plate
  • 2 glasses

Method

We’ve split this one into four different “phases” of steps.

The first three pull together a few of the unique ingredients of the drink, while the fourth one creates the Coconut Iced Coffee itself.

The Coffee Cubes

  1. This part is easy. Start by brewing a cup of coffee and letting it cool.
  2. Pour coffee into your ice cube tray.
  3. Place tray in the freezer and leave for several hours or overnight.
  4. And that’s it! Leave them in the freezer until you’re ready to make your drink.

The Coconut Whipped Cream

  1. Refrigerate the can of coconut milk (unopened) overnight.
  2. Flip the can upside down and open it. There should be coconut water that has separated inside the can. Pour this out (but consider saving it for another recipe!).
  3. Scoop out the remaining cream, place into a bowl and beat it with a mixer for several minutes on high speed.
  4. When soft peaks begin to form in the cream, add in the powdered sugar and vanilla extract and beat until it reaches the consistency of whipped cream.
  5. Place in the fridge while you prepare everything else.

The Coconut Sweetened Condensed Milk

  1. Combine the coconut milk, vanilla extract, and sugar into the saucepan and give it a light stir.
  2. Bring mixture to a boil.
  3. Once it reaches a boil, reduce to low heat, allowing the concoction to simmer for an hour and a half to two hours.
  4. Keep an eye on the mixture during this time. The milk will thicken and it will slowly reduce as it simmers. The key is to remove it once it reaches half of its original volume.
  5. Allow your coconut condensed milk to cool.
  6. Once cool, pour it into a Mason jar and store in the fridge until you’re ready to make your Coconut Iced Coffee. At this point, you’re ready to put the actual drink together!

The Coconut Iced Coffee

  1. Begin by drizzling a portion of the chocolate sauce in a circle on the plate. Flip your glass over and rim it with the chocolate sauce.
  2. Next, dip the rim of the glass into your toasted coconut.
  3. Add any remaining syrup to the inside of the glass, and set glass aside.
  4. Combine the coconut milk, vanilla extract, and coconut sweetened condensed milk together in a separate glass, and stir until thoroughly mixed.
  5. Add coffee cubes and coffee into the prepared glass from step 3.
  6. Add the coconut milk, vanilla, and coconut sweetened condensed milk mixture into your glass.
  7. Stir.
  8. Add the coconut whipped cream on top, along with a drizzle of chocolate syrup and any more coconut flakes, if desired.

Extra Notes: 

  • To ensure everything is ready at the same time, put the can of coconut milk (for the coconut whipped cream) into the fridge when you put your coffee cubes in the freezer.
  • Toasting coconut is a very simple process and can be done in different ways. You can see it done on a stovetop, in an oven, and even in a microwave here.
  • For a fancier feel when you drizzle the chocolate syrup into your glass, do so in vertical streaks. This will give your drink a more purposeful, designed look. You can see some good pictures of this in action in this recipe for a cardamom and dark chocolate swirl whisky milkshake.

Cold Brew Coffee

While this is technically a recipe for “iced” coffee, you can also make it with cold brew coffee, as well.

Cold brew coffee will have both less acidity and a stronger coffee flavor.

Coconut Sweetened Condensed Milk

While you could use normal sweetened condensed milk with this one, we strongly recommend taking the time to make the coconut version yourself.

You have the other coconut ingredients, but this adds a unique coconut flavor to the body of the drink, not just as a garnish or a creamer.


And there you have it: tropical coffee in a glass!
