How To Make The ‘Pancake’ – A Secret Espresso Based Signature Drink

- 1/2 oz maple syrup
- 1 shot espresso
- 1/2 oz heavy cream or whipping cream
- icing sugar garnish
- cinnamon garnish
- espresso cup
- spoon for stirring
Run a piece of cut lemon around the rim of your espresso cup. Once it is moist with the lemon juice, dip the cup into the sugar to lightly coat the rim
Pour ½ oz of maple syrup into the cup
Mak the espresso shot and pour it into the cup
Add the ½ oz of heavy (or whipping) cream
Sprinkle on some icing sugar and cinnamon
Stir the drink to make sure it is all mixed together
How to Make The Pancake
You could really mess with your friends with this – invite them over and tell them you are making The Pancake.
Don’t explain any further than that.
Just: “Hey, come on over for brunch. I am making… The Pancake”. They will be pretty surprised when you hand them a coffee that tastes just the short stack they were expecting.
You also could make chocolate covered bacon as the stir sticks, if you really wanted to mess with them. Just sayin’.

Step #1. Pucker Up, Sweetness
Run a piece of cut lemon around the rim of your espresso cup. Once it is moist with the lemon juice, dip the cup into the sugar to lightly coat the rim.
Pro Tip - Pour the sugar out onto a small plate and form it into a circle roughly the size of the espresso cups or mugs you are using. Once you have the lemon juice on the rim, all you need to do is flip it over and dip it into the sugar!
Step #2. Get Sappy
Pour ½ oz of maple syrup into the cup.
PRO TIP - Don’t cheap out here. Buy real maple syrup, as using the fake stuff will ruin the drink. Good maple syrup – which is made from gathering the sap of the maple tree by hand – costs more, but is worth it.
Step #3. Espresso Yourself
You’re a member of the great coffee at home tribe – and you likely have a kick ass espresso machine at home.

Pro Tip - If both a proper espresso machine AND a Moka Pot just aren’t in the cards for you at this point, don’t give up hope! There are other ways to hack a proper shot of espresso right in your home kitchen. Just remember that these won’t necessarily taste quite as good as an authentic espresso shot.
Step #4. Pour It On Thick
Add the ½ oz of heavy (or whipping) cream.
PRO TIP - You can slightly whip this cream to give more texture. Don’t whip it up like you would for pie, but do thicken it up a bit.
Step #5. Gimme Some Sugar (and Spice)
Sprinkle on some icing sugar and cinnamon.
PRO TIP - Mix the cinnamon and icing sugar together, and top with a little bit of lemon zest to create a fancier look.
Step #6. Stir It Up
Stir the drink to make sure it is all mixed together.
PRO TIP - If you want to make this a boozy breakfast drink, you can add either a coffee-based liqueur like Kahlua, or limoncello to the cup.

The skinny on maple syrup
The key to this entire recipe is, of course, the maple syrup. Without it, you’ve pretty much just got a plain cup of coffee (not that that’s a bad thing!).
We mentioned earlier that you really want to go for the real stuff, though. Not that fake crap. And here’s why.
Real maple syrup is, well, the real deal. It’s not corn syrup or some other sweetener masquerading as something it’s not. Maple syrup farmers literally take the time to “tap the trees” in order to access some of the sweet goodness inside.
Before you go thinking the syrup is THAT easy to get, though, the “sweet goodness” isn’t the syrup itself, but rather the sap of the tree.
The stuff usually only has around 1-2% sugar content when it’s pulled out of the trunk, usually into buckets or tubing running to vats and holding containers.
From there the farmers boil it down at as much as 40 gallons of sap for EACH gallon of syrup!
