How to Make Vegan Espresso Fudgesicles

There are hot days, and then there are HOT days.

When that thermometer pushes up into places it should never even consider going, you need to have a plan in place so you don’t melt into a pile of lethargic mush.

We’d like to suggest a critical piece to your “stay cool and beat the heat” plan: Vegan Espresso Fudgesicles.

Fudgesicles are great on their own, of course, but a bar of cool chocolate on a hot day is just going to make you sleepy.

The solution?

Add ESPRESSO!

That’s right. If the heat index is through the roof, these are the perfect way to fight back.

Ingredients

  • 1 can full fat coconut milk
  • 1 tbsp ground espresso beans coarse grind
  • 3/4 cup bittersweet chocolate chopped
  • 1 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Instructions

  1. Place the chopped chocolate, ground espresso, and coconut milk into a saucepan over medium to low heat, stirring regularly until the chocolate is mostly melted.

  2. Remove the pan from the heat and let it sit for 5 minutes. Strain the mixture through a mesh strainer to remove the grounds.

  3. Stir in the sugar, vanilla, and salt, mixing thoroughly until dissolved.

  4. Once the mixture is prepared, pour it into fudgesicle molds and put it into the freezer.

How to Make Vegan Espresso Fudgesicles

First off, let’s pause for a second and rejoice. These things are vegan! Not only that, but they don’t use weird “alternative” options that promise to give you a great recreation of what you’re craving… and then fail to deliver.

Not here. Not on our watch.

These fudgesicles are legit.

So whether you’re a vegan or not, these are going to do the trick.

This recipe makes around six fudgesicles (maybe eight or so if the molds are smaller), so it should be enough for you and a few friends.

What You'll Need

  • 1 can of full fat coconut milk (14 oz)
  • 1 tbsp espresso beans
  • ¾ cup bittersweet chocolate
  • 1 tbsp sugar
  • ½ tsp vanilla extract
  • Pinch of salt
  • Fudgsicle molds
  • Saucepan
  • Fine mesh strainer

Extra Notes:

  • You’re going to want to get a batch of “espresso beans” for this recipe. Check out this article, though, to learn the difference between espresso beans and regular coffee beans!
  • While most ingredients in a recipe are fun to play around with, in this case, it’s the sugar more than anything else that you can adjust to your heart’s content. Add in the basic amount we suggest and taste the mixture. If it’s not sweet enough, add more!

Method

  1. First things first, chop the bittersweet chocolate into small pieces.
  2. Next, grind the espresso beans on a coarse setting.
  3. Place the chopped chocolate, ground espresso, and coconut milk all into a saucepan over medium to low heat, stirring regularly until the chocolate is mostly melted.
  4. Remove the pan from the heat and let it sit for a few minutes, so the coffee has time to steep.
  5. After about five minutes, strain the mixture through the mesh strainer to remove the grounds.
  6. Stir in the sugar, vanilla, and salt, mixing thoroughly until dissolved.
  7. Once the mixture is prepared, pour it into your fudgesicle molds and put it into the freezer.
  8. Wait for a few hours. (This is the hardest part…)
  9. As soon as they are fully frozen, run the mold under warm water to loosen up the fudgesicles and pop them out.
  10. Enjoy!

Extra Notes:

  • If you pull a stick out of a fudgesicle when removing it from the mold, just run the stick under warm water, pop it back into the mold, and throw it into the freezer for a bit.
